The Marubouro is the iconic sweet of Saga Prefecture. About the size of a cookie, it has an open cake-like texture and a rich sweetness that comes from the brown sugar. This cake has a 300-year long history in Japan from when it was introduced to Saga prefecture in 1670 by the Dutch. Adjustments were made to the original recipe (where it started off as a smaller, harder biscuit) to better suit Japanese tastes. The modern Marubouro features a well-baked exterior with a softer interior, perfect for a handheld cake.
