The financier is a classic French cake made with almond flour and usually baked in a small mold and flavored with beurre noisette (brown butter). This adorable bite-sized cake is shaped like an apple, hinting at its flavor. Domestically-grown Japanese apples are cooked down to make the apple butter that replaces the traditional beurre noisette. The almond flour and apple butter keep this cake wonderfully moist, but it still has the crisp exterior that is traditional.
